Baking. A LOT!

You may remember this post from a few years back where I decorated some boxes & filled them with goodies to give to co-workers. Well, the Praline Strips that I made went over so well that I've stuck to that tradition & now make these now every year for all of Pete's co-workers as well as some of mine. (make sure you scroll to the bottom of the post for the recipe - they are SUPER easy & quick to make. If you are looking for a last minute dessert to make this year, you NEED to try these!)

OH and they are calorie free! I promise ;)

I've changed some things these past 2 years: Instead of stamping the boxes myself, I buy these decorative Christmas boxes at AC Moore or Michael's. I snag them as soon as I see them come out in stores - because they are super cheap (I believe you get 2 boxes to a bag & they are $1 each!) - and they just made a great way to give something like this. They are food safe too which is also good. I simply layer some wax paper inside and add my layers of Praline Strips to fill up the boxes. I then add some decorative ribbon & voila! Done! All the co-workers are taken care of. It's definitely a cost effective way to give to people you work with.

Here is the recipe - trust me, they are AMAZING. If you try it out, please let me know if you agree!

Praline Strip Ingredients:

1 cup butter

1 cup brown sugar (firmly packed)

1 cup chopped Pecans

Approx. 24 Graham Crackers

Instructions:

1. Line a jelly roll or cookie sheet with tin foil (I leave the foil hanging over the ends so that I can use them as handles to pick it up once they are cooled).

2. Cover bottom of pan with graham crackers, splitting them into halves. (you can also split them into quarters if you want so you don't have to do it later)

3. Bring to boil: 1 cup butter (has to be REAL butter), 1 cup brown sugar. Once it reaches a boil, simmer for 2 minutes.

4. Add 1 cup chopped pecans and stir.

5. Remove from heat and pour mixture over the Graham Crackers. Spread evenly.

6. Bake in 400 degree oven for 5 minutes.

7. Take out and let cool – if needed you can cut crackers while still warm.
